  • 1 tbsp olive oil
  • 1 (150g) medium onion, chopped finely
  • 1 clove of garlic, crushed
  • 1 (200g) medium red capsicum, chopped finely
  • 2 x200g HARVEST GOURMET Incredible Mince
  • 1 tbsp Mexican herbs or make your own (see recipe below)
  • 2 x 400g can crushed tomatoes
  • 400g can kidney beans, rinsed and drained
  • 125g can of corn kernels, rinsed and drained
  • 1 bag of natural tortilla chips
  • 1 (200g) medium red capsicum, chopped finely
  • 1 avocado, seeded peeled and mashed
  • ¼ cup fresh coriander leaves
  • 1 lime
  • ½ cup ( 120g) vegetable yoghurt

Cooking Instructions:

  • Heat oil in a medium frying pan over low heat. Add onion, garlic and capsicum; cook 2-3 minutes or until fragrant; add the HARVEST GOURMET Incredible Mince and Mexican herbs; cook 2-3 minutes. Add canned tomatoes and simmer 10 minutes.
  • Stir through kidney beans and cook, stirring occasionally for 5 minutes.
  • Serve mince mixture with, and separate bowls filled with corn kernels, tortilla chips, capsicum, avocado, fresh coriander, lime and vegetable yoghurt so that everyone can put together their own "sin carne”.

Tip - ‘Make your own’ Mexican spices: Mix 4 tsp paprika powder with ½ tsp cayenne pepper, 1 tsp ground cumin, 1 tsp garlic powder, 1 tsp onion powder and ½ tsp salt. You can make this in larger quantities and keep it in a sealed jar.
