Creamy Meatballs with Zoodles

4 servings


1 tsp oil
1 medium onion, chopped finely
2 cloves garlic, crushed
2 x 200g Harvest Gourmet Mince Balls
40g butter
2 tbsp plain flour
2 cups (500mL) stock of your choice
125ml thickened cream
2 tsp worcestershire Sauce
2 tsp Dijon mustard
2 tsp soy sauce
250g store-bought or homemade zucchini noodles
steamed broccoli, for serving, if desired

1. Step 1

Heat oil in large non-stick frying pan over medium heat; add onion and garlic, cook for 2-3 minutes until fragrant and softened. Add HARVEST GOURMET Mince Balls to pan and cook according to directions on pack. Remove mixture from pan and keep warm.

2. Step 2

Using same heated pan, add butter, heat until melted and foaming, add flour; cook, stirring, until mixture thickens and bubbles. Gradually add stock; stir until mixture boils and thickens.

3. Step 3

Add cream, Worcestershire sauce, Dijon mustard and soy, stir to combine. Return meatballs, onion and garlic mixture to pan; simmer for a further 2 minutes or until thickened and meatballs are heated through.

4. Step 4

Meanwhile, microwave or steam zucchini noodles for 2 minutes. Serve meatballs over zoodles. Serve with steamed broccoli, if desired.
