2 cups (380g) quinoa, cooked
½ bunch dill, chopped
250g cherry tomatoes, halved
2 (50g) spring onions, chopped
½ bunch coriander, chopped
¼ cup (30g) pistachios, roughly chopped
1 pomegranate, seeds only
1 cup (120g) low fat greek yoghurt
2 tbsp lemon juice

Falafel and Quinoa Salad Bowl

Preparation

1. Step 1

Cook Harvest Gourmet Classic Falafels according to packet instructions and reserve

2. Step 2

In a medium mixing bowl combine; quinoa, cherry tomatoes, spring onions, dill, coriander, pistachios and pomegranate seeds

3. Step 3

Mix yoghurt with lemon juice. To serve divide Harvest Gourmet Classic Falafels into plates; add quinoa mixture and dollops of yoghurt.
