2 pkts Harvest Gourmet Classic Falafel
1 cup (120g) low fat greek yoghurt
1 tbsp honey
1 tbsp lemon juice
250g cherry tomatoes, halved
1(140g) cucumber, finely sliced
1 cup (80g) red cabbage, shredded
1 cup (120g) frozen peas, cooked and crushed
2 cups (40g) baby spinach
½ bunch mint leaves

Preparation

Cook Harvest Gourmet Classic Falafel according to packet instructions and reserve.

In a small mixing bowl add; yoghurt, honey and lemon juice. Mix well.

To assemble divide Harvest Gourmet Classic Falafel into bowls . Add cherry tomatoes, cucumber, red cabbage, crushed peas, baby spinach and mint leaves.

Drizzle yoghurt dressing over the plates and serve.
