Sweet Potato and Carrot Burger

Ingredients

  • 1 cup (80g) red cabbage, sliced thinly
  • ½ lemon juiced
  • 1 pkt (226g) HG Incredible Burger
  • ½ cup (150g) sweet potato, cooked and mashed
  • 2 vegan hamburger buns, toasted
  • 4 leaves cos lettuce
  • 1 cup (20g) baby spinach
  • 2 tbsp vegan mayonnaise
  • 1 small (130g) cucumber, sliced into ribbons
  • 1 cup (120g) carrots, cut into matchsticks

Cooking Instructions:

  • In a mixing bowl combine red cabbage and lemon juice. Reserve.
  • Cook Incredible Burger according to packet instructions.
  • Spread sweet potato onto bun bases and top with lettuce, spinach, red cabbage; add Incredible Burger, carrots, vegan mayonnaise, cucumber ribbons and bun lid.

Tip: Use a vegetable peeler to carefully slice the cucumber lengthways into long, thin ribbons.
