Mini Wraps with Chargrilled Strips

Ingredients

1 tbsp olive oil
1 medium red capsicum (200g), sliced thinly
1 medium yellow capsicum (200g), sliced thinly
1 small zucchini (90g), sliced thinly
1 red onion (100g), sliced thinly
2 packs Harvest Gourmet Chargrilled Strips
4 small tortilla wraps
3/4 cup (200g) yoghurt
2 tbsp mayonnaise
Salt, to taste
1 lemon - zest and juice
Dill, to garnish

Preparation

1. Step 1

Preheat the oven to 180ºC/160 ºC fan-forced.

2. Step 2

Heat half the oil in a large non-stick frying pan over medium-high heat. Add capsicums, zucchini, and onion; sauté until softened; remove from pan; set aside and keep warm. Heat remaining oil in pan; cook Harvest Gourmet Chargrilled Strips over low to medium heat for 4-7 minutes or until heated through.

3. Step 3

Divide veggie mixture and Harvest Gourmet Chargrilled Strips amongst wraps; and fold them like a cone and secure with a skewer. Place them on a baking tray and bake for 3-5 minutes or unit warmed through.

Meanwhile; Mix the yoghurt with mayonnaise and season with lemon juice, zest, salt and pepper. Mix in finely chopped dill. Serve with the wraps.
