Ingredients

1 packet Harvest Gourmet Sensational™ Burger
2 sweet potatoes
1 cup rocket leaves
100g baby spinach
Olive oil
200g frozen broad beans (or peas)
¼ red cabbage
100g quinoa
200g chickpeas (can, drained)
2 tomatoes
2 tbs pomegranate seeds
1 lemon
2 tbs hummus

Preparation

Preheat the oven to 200 ºC. Place the sweet potatoes peeled and cut into wedges on a baking tray, drizzle with olive oil and season with salt, pepper and finely cracked fennel seeds. Roast for about 15 minutes.

Blanch the beans for 1 minute. Rinse them under cold water and remove them again (squeeze the green bean out of the broad bean shell). Cut the red cabbage into thin strips and season with salt, pepper and lemon juice.

Rinse the quinoa and boil in 200ml of water until the water disappears.

Stir fry the chickpeas in a little oil for about 4 minutes.

Cook the Harvest Gourmet Sensational™ Burgers in a frying pan according to the instructions on the package.

Dice the tomatoes. Divide the quinoa and spread over the bowls. Add the sweet potato, red cabbage, chickpeas, beans and a generous spoonful of hummus. Cut the burgers into strips and put them on top. Garnish with pomegranate seeds and lemon.
