1 (250g) small sweet potato, peeled, sliced thinly
cooking oil spray
1 (320g) ripe avocado, seeded and mashed
1 (90g) small tomato, chopped finely
1/4 (25g) small red onion, chopped finely
½ lemon juice, juiced
1 tsp ground paprika
1 (226g) packet Harvest Gourmet Sensational Burger
2 seeded burger buns, halved
1 (30g) cup mixed lettuce
1/3 cup (100g) store brought beetroot relish
2 tbsp cream cheese

Sensational Burger Stack with Beetroot Spread & Guacamole

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray.

Arrange sweet potato in a single layer on prepared tray, spray with olive oil. Bake for 20 minutes, or until cooked through and tender.

To make guacamole, combine avocado, tomato, red onion, lemon and paprika.

For the beetroot topping, combine store brought relish and cream cheese, mix well.
