Heat the oven to 200 degrees and cover a baking sheet with parchment paper. Wash the sweet potato thoroughly and cut it into thin wedges.
Spread the sweet potato on the baking sheet, drizzle with olive oil and season with pepper and salt. Bake for 20 minutes, or until cooked through.
For the guacamole: 2 ripe avocados / ½ red onion / 2 cloves garlic / 1 diced tomato / 1 tsp ground paprika / pepper and salt. Mash the ripe avocados in a bowl with the chopped garlic and lime juice. Then add red onion, paprika, pepper and salt and mix everything together. For the guacamole, add all the ingredients except the tomato to the blender and mix until you get a smooth paste. Stir in the diced tomato.
For the beetroot sauce: 140 grams canned beetroot / 110 grams cream cheese / ½ tsp of cumin / ¼ tsp garlic powder / 1 tsp lemon zest / 1 tbsp lemon juice / pepper and salt. Add all the ingredients to the blender and mix until you get a smooth texture.
