1 tbsp. olive oil
1 medium onion, chopped finely
1 clove garlic, crushed
1 medium (200g) red capsicum, chopped finely
2 packets Harvest Gourmet Sensational™ Mince
1 tbsp Mexican herb & spice blend (or make your own, see recipe below)
2 x 400g can crsuhed tomatoes
400g can kidney beans, rinsed and drained
125 can corn kernels, rinsed and drained
1 bag natural tortilla chips
1 medium (200g) red capsicum, chopped finely, extra
1 avocado, seeded, peeled, chopped coarsely
1 bunch fresh coriander
1 lime
1/2 cup (120g) Crème Fraiche (or Vegan Yoghurt)

Heat oil in a medium frying pan over low heat. Add onion, garlic and capsicum; cook 2-3 minutes or until fragrant; add the HARVEST GOURMET Incredible Mince and Mexican herbs; cook 2-3 minutes. Add canned tomatoes and simmer 10 minutes.

Stir through kidney beans and cook, stirring occasionally for 5 minutes.

Serve mince mixture with, and separate bowls filled with corn kernels, tortilla chips, capsicum, avocado, fresh coriander, lime and vegetable yogurt so that everyone can put together their own "sin carne”.
